Pancakes

Ingredients (makes about 8–10 pancakes):

  • 1 cup all-purpose flour (approx. 120 g)
  • 1 teaspoon baking powder
  • A pinch of salt
  • 2 tablespoons sugar (adjust to taste)
  • 1 cup ricotta cheese (approx. 250 g)
  • 2 eggs
  • ¾ cup milk (approx. 180 ml)
  • 2 tablespoons melted butter (or oil)
  • Butter or oil for frying
