
Approx. 200 g of beef
Ingredients:
- Beef tenderloin (approx. 200 g)
- 50 g pickled mushrooms
- 1 shallot or red onion
- Salt
- Black pepper
- Neutral oil (e.g. rapeseed or sunflower)
- 1 egg yolk
- Chives (for garnish)
Preparation:
Finely dice or mince the beef*.
Chop the onion and pickled mushrooms into very small pieces as well.
Place all chopped ingredients into a bowl. Add a generous amount of freshly ground black pepper and a bit less salt. Pour in about 2–3 tablespoons of oil. Mix everything thoroughly.
Spoon the mixture onto a plate and shape it into a mound. Create a small indentation in the center and place the egg yolk inside — try to remove all the egg white beforehand.
Garnish with finely chopped chives and serve immediately.
*Tip: Tartare is best when the beef is hand-chopped rather than ground, as it keeps a better texture.
