CARROT CAKE

Ingredients:

  • 300 g flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon
  • 200 g brown sugar
  • 4 eggs
  • 250 ml oil
  • Zest of one orange
  • Zest of one lemon
  • 300 g grated carrot
  • 100 g walnuts
  • 200 g canned pineapple (chopped)

Frosting:

  • 125 g softened butter
  • 50 g powdered sugar
  • 200 g cream cheese (e.g. Philadelphia type)

Instructions:

  1. Sift the flour together with cinnamon, baking powder, and baking soda into a bowl. Then add the sugar.
  2. Beat the eggs with oil and the zest of the orange and lemon.
  3. Add the grated carrot to the egg mixture, then combine with the flour mixture and mix thoroughly.
  4. Add the chopped walnuts and diced pineapple.
  5. Pour the batter into a springform pan lined with baking paper.
  6. Bake in a preheated oven at 150°C (300°F) for about 1 hour and 20 minutes.
