Ingredients:
- 300 g flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoons cinnamon
- 200 g brown sugar
- 4 eggs
- 250 ml oil
- Zest of one orange
- Zest of one lemon
- 300 g grated carrot
- 100 g walnuts
- 200 g canned pineapple (chopped)
Frosting:
- 125 g softened butter
- 50 g powdered sugar
- 200 g cream cheese (e.g. Philadelphia type)
Instructions:
- Sift the flour together with cinnamon, baking powder, and baking soda into a bowl. Then add the sugar.
- Beat the eggs with oil and the zest of the orange and lemon.
- Add the grated carrot to the egg mixture, then combine with the flour mixture and mix thoroughly.
- Add the chopped walnuts and diced pineapple.
- Pour the batter into a springform pan lined with baking paper.
- Bake in a preheated oven at 150°C (300°F) for about 1 hour and 20 minutes.
